Simple Rocket Pesto

I like to spend some time on Sunday prepping food for the week a head. Making big batches of wholegrains, salads and prepped veggies makes it so easy to quickly throw together healthy meals throughout the week. I also like to make a sauce or topping which can be used across a range of meals and help bring it all together. This is my favourite pesto at the moment; it is full of healthy fats, which our body needs to absorb essential vitamins from our foods. They also help manage moods, maintain mental functionality, fight fatigue and even help maintain weight so a great addition to any meal. Use this in courgetti or just as a delicious drizzle over your salad or roasted veg.

Makes 1 jam jar



  • 3 handfuls of Rocket
  • 3 Cloves of Garlic
  • ½ Cup of Pine Nuts
  • ½ Cup of Olive Oil
  • Juice of 1 Lime
  • Salt and Pepper


Place all ingredients in a food processor and blend until smooth.

Season with salt and pepper.

Store in the fridge in an airtight container.
